This Smashed Avocado Chilli Tomato Toast channels spring vibes and has quickly become my new healthy favourite. The winter is finally over and we start craving lighter more spritzy meals.
In the winter I am totally your avocados and eggs on toast girl but in the summer I like layering my “avo toast” with summery toppings! My all time addiction is this little avocado chilli tomato toast. It is perfect for a light meal such as breakfast and great as a simple vegan recipe.
I have been having this either for breakfast, dinner or lunch pretty much every other day. Avocados are a fruit/vegetable (people group it together as one or the other, I feel it’s more of a veg but in the name of political correctness I will mention the fruit part to) you can pair easily with many foods.
I tend to love smashing it over toast and topping it with various combinations, but this is hands down my favourite light vegan savoury option. I have to say as a snack 2 small pieces of wholegrain toast or crisp break topped with the avocado chilli tomatoes is filling. However, as a lunch or dinner and some people for breakfast it’s just not enough food. I like bulking the meal a but with a leaf salad and vegan sausages or just a side salad.

Smashed Avocado Chilli Tomato Toast
Yield 1 person
A great easy vegan avocado toast recipe perfect for sunny days.
- 2 slices wholegrain bread
- 1/2 large avocado
- 5 cherry tomatoes
- Pink Himalayan salt and pepper
- Sprinkle of crushed chilli
1. Toast 2 slices of bread until nice and crispy, wait until they cool down a bit and equally smash half an avocado on bread with a fork.
2. Chop up cherry tomatoes into quarters and place on top
3. Sprinkle with salt, pepper and crushed chilli
Enjoy to the fullest!
