Often when we buy a salad, we pick and choose what we want to eat from it. Either the leaves are too bitter, soggy or not crunchy enough, there are a million reasons why some ingredients just don’t make the cut.
That is the inspiration behind this salad, the ingredients are not rocket science but I am guilty of cherry picking what I eat in a salad unless I am absolutely famished and inhale the whole thing without realising taste or texture!
So why not make something that we love minus the leaves, for those occasions where we want a salad only with all our faves?
Generally, eating salads on the reg is boring after a while but this cucumber, avocado, cherry tomatoes one is a great to incorporate into your clean eating lifestyle. I add this on the side when having steak, grilled chicken or fish. It’s simple and very easy to make, it reminds me of the summer, as it’s fresh, light and full of flavour.
Also good to have on your lower carb days!
Avo Cucumber Tomato Salad
A super easy salad that is suitable as a side with any piece of meat or fish.
Ingredients
- 14 cherry tomatoes
- 1/3 cucumber
- 1 avocado
- 1/2 red onion
- 2 tsp french mustard
- 3 tsp balsamic vinegar
- 1 tbsp oilve oil
- 1/2 tsp agave nectar
- salt to taste
- pepper to taste
Method:
1. Start by chopping the onion, cucumber, avocado and tomatoes into cubes, add to a bowl.
2. Make the sauce in separate small bowl by mixing all the remaining ingredients.
3. Pour the sauce over the salad and mix well until evenly coated.
Enjoy with a piece of fish or meat!
