Kale me up already! This recipe is perfect for when you have that extra leafy green left in the fridge or you just feel like having a healthy meal. It’s perfect for breakfast, lunch or dinner, and above all it’s the easiest thing to make. So for all you working peeps out there, this will come in super handy!
In general, eggs with leafy greens is always such a fantastic combination with bread. It’s all about eggs and avocado majority of the time, so let’s make this a new thing!
You can replace the bread with oven baked sweet potato for a paleo version.
You must give this a go! It’s an amazing way to eat these nutrient dense greens full of vitamins.
Kale Sunny Side Up

Sunny side eggs topped on a bed of crispy kale.
Ingredients
- 1/4 tsp coconut oil
- 2 eggs
- 50g kale
- 1/4 tsp chilli flakes
- 1/8 tsp pink Himalayan salt
- 1/8 tsp pepper
Method:
1. In a hot pan add the coconut oil and kale. Toss it around until it gets really crisp on medium heat. It’s important to only use the tiniest amount of oil to not drench the leaves.
2. Add your spices once it’s all crispy, and crack two eggs over the bed of green.
3. Make sure the eggs are cooked through before serving.
Have with sourdough bread or baked sweet potatoes! Trust me it’s so freakin yummy!
