This Mexican burrito bowl is the perfect at home Chipotle inspired meal. Like who is totally not in love with Chipotle?!
Once I figured out how to order a macro friendly Chipotle, it quickly became one of my favourite lunch places on days I didn’t take in a prepped meal for lunch. I watched countless youtube videos on “What I Eat in a Day” and so many social media fitness stars incorporated a Chipotle into their diet.
In essence Mexican food is quite healthy, the secret is to avoid the full on burrito and go for the healthy insides.
Most of the time I go for the salad bowl with a bed of lettuce, fajita peppers, grilled chicken, black beans and salsa, sometimes I will do a little bit of avocado mash.
The sad thing is that Chipotle is near my work, so if I crave a Mexican macro friendly meal at home, I am pretty much at a loss. So I started experimenting with Mexican flavours and trying out my own little Mexican burrito bowl at home.
It took a few attempts to get the balance of flavours right but once I mastered it, I have to say I am really impressed with myself. My love for a good Chipotle is big but I do love my version more because its cooked fresh. and I know exactly all the ingredients that go in, making it more healthy.
I usually serve this Mexican Burrito Bowl in a bowl to get that Chipotle feel but for the purpose of this recipe photo I decided to lay it out on a plate so y’all can see everything!
Healthy Mexican Burrito Bowl

A Chipotle inspired clean eating Mexican burrito bowl minus the wrap.
Ingredients
Black Beans
- 2 cans of black beans
- 1/2 tsp coconut oil
- 400g chopped tomatoes
- 2 onions
- 3 garlic cloves
- 1 tsp cumin
- 2 tsp Encona West Indian sauce
- 1 tsp salt
- 1 tsp pepper
Grilled Chicken
- 600g chicken
- 1 tsp coconut oil
- 2 tsp cumin
- 1 tsp pink Himalayan salt
- 1 tsp pepper
- 1 tsp cayenne pepper
- Mrs Dash Chicken seasoning
Charred Peppers
- 2 red peppers
- 1 onion
- 1 tsp cumin
- 1/4 tsp salt
- 1 tsp cayenne pepper
Sweetcorn
- 2 large sweetcorn
- 1/2 tsp cayenne pepper
Method:
Black Beans
1. Chop up onions and the garlic, heat up coconut oil in a pot, fry the onion and garlic until golden brown,
2. Add the spices and mix well.
3. Pour in the chopped tomatoes along with the black beans, and leave to cook for 20 minutes
Grilled Mexican Chicken
1. Cut the chicken into cubes. Heat coconut oil in a pan and once hot add the chicken and the spices.
2. Cook for 15 mins until its soft and has grilled outer layer
Charred Peppers
1. Slice the pepper and onion in strips, move the chicken to one side of the pan once cooked and add the onions.
2. Fry the onions until they are soft and add the spice and peppers to it, steam for about 10 minutes and the are ready
Sweetcorn
1. Heat the oven to 180C and rub cayenne pepper into the sweetcorn and pack them in foil.
2. Put the sweetcorn into the oven once hot and cook for 20 minutes
Once everything is cooked up nicely serve on a plate or bowl with a side of brown rice and some guac!
