This Fig & Pear salad is perfect for the summer or any time really. We have had the hottest summer in London, and I am always craving light and fresh meals. Adding certain fruits to my salads gives it more volume and adds a bit of extra flavour.
You would love this Fig & Pear salad if you are a total sweet and salty person. This recipe satisfies both cravings and it is a perfect balance of flavours.
You can have this on its own, which I do mostly but sometimes I will have it with vegan sausages or my absolute fave, a couple of thinly sliced goats’ cheese. The combination of the fruit with the veggies and cheese just creates an explosive flavour. However, for all you vegan peeps out there, leave the cheese out. It’s also less calorific that way if you are watching your macros.
