Omg, this acai skyr bowl is my new found love. If you have been on the Naturally Sweebs journey, you will know that I love a good acai bowl. But I used to make it the same way over and over again. Don’t get me wrong I love my detoxifying acai bowl recipe but this new acai skyr bowl combo, is outta this world bomb!
A standard breakfast of mine, especially at work, is a skyr yoghurt topped with fruits and granola because it is totally refreshing and super easy to make. On the weekends I tend to go for an acai bowl because I have more time to feel my vibe out, prepare brekkie and do all my toppings (guys selecting your perfect combination of toppings may take a sec). Last weekend I started mixing skyr yoghurt into my acai bowl right before adding my toppings. AND OMG! It is so freakin amaze.
Like are you kidding me?!
This is actually beyond amazing. It’s super creamy, kind of sweet and a little sour all in one. Oh and of course the crunch from the toppings like; granola and cashews, and the slight saltiness from the crunchy almond butter, like…basically I just had a bowl for breakfast, and I am craving one right now from writing this!
So, YOU HAVE TO GIVE THIS ACAI SKYR BOWL A GO!
Acai Skyr Bowl
Prep
Total
Yield 2 bowls
Delicious and protein packed acai bowl mixed with vanilla skyr
Ingredients
- 2 frozen bananas
- 1 cup frozen raspberries
- 1 cup frozen blueberries
- 1 handful spinach
- 2 ice cubes
- 1 tsp acai powder
- 1 scoop vanilla protein powder
- 1/8 cup unsweetened almond milk
Toppings
- 1 tbsp vanilla skyr
- 1 handful unsweetened cashew coconut granola
- 2 tsp crunchy almond butter
- 2 tsp quinoa pops
Method:
- Place all ingredients in a food processor except for all the topping ingredients
- Blend until creamy and smooth. Then empty the contents into two bowls, and fold in some skyr
- Drop in your toppings and drizzle the chunky almond butter on top followed by a sprinkle of shredded coconut and quinoa pops
You can add whatever toppings you like but I just think this nutty, crunchy, and slightly salty, sweet and sour combo works perfect with the ones I used. Certainly, adding a few banana slices or a splash of agave nectar will give it further sweetness, if that’s your vibe. I’m just the girl that would rather add more granola and almond butter halfway through the bowl, so I save on the extra sweetness in terms of calories.
Let me know in the comments below if you try this out 🙂
Naturally,
Sweebs xx
